Retort is process that uses heat and pressure to cook food in strong sealed package. It is the most acceptable form of food preservation. Retort food was initially created by NASA and formerly brought to INDIA by our Defence Food Research Laboratory (DFRL), basically for our Jawans working in most inhabitable places. The food has thus been proved under vigorous testing conditions by the ultimate users. A retort pouch is constructed from a flexible metal-plastic coat that is capable to survive the thermal processing used in support of sterilization. The food is primary prepared, cooked, and thereafter sealed into the retort pouch. The pouch after that is heated to 240-250°F(116-121°C) for quite a few minutes under high pressure inside a retort or autoclave machine. The food within is cooked in a similar way to pressure cooking This process reliably kills all commonly occurring microorganisms averting it from spoiling: The lamination construct does not allow penetration of gases from outside into the pouch. This multi-layer structure prevents the retort pouch from being recycled in to other retort pouches or food packaging. This ready to eat food products have found a welcoming space in the market as people are opting to choose retort pouches for better taste, time saving and is completely wastage free. Big food brands a getting their food processed as their clients wish to take their food along with them wherever they go and can just open the packet and eat the product with the same taste anywhere in the world.
